Just not too long ago I went to the new Istana Negara as the hotel obtained an outside catering service with the royalty people and we had to like prepare for 800pax! Within the week it was chaotic and Christmas was near as well.
The menu was a 4 course meal; appetizer, soup, maincourse and dessert. For dessert, my Pastry Chef made the Pineapple Chiboust Brownies. It is basically brownies with a thin layer of homemade pineapple jam topped with Chiboust cream (Pastry cream with Italian Meringue).

Couldn't snap pictures inside the Istana so all I could snap was the outside x.x! It's pretty big yet empty. Hmm... Couldn't tour much as well. Don't wanna end up getting shot lol!
